I'm on vacation, traveling with jiapa to visit various national parks and other major sites around Las Vegas. The original plan: visit the Grand Canyon, Hoover Dam, and Death Valley, then sort out what else to do with the time that's left.
The national park bit just to the north of LV whose name I forget, is quite nice to walk around. It's a bit depressing getting there as you drive (only way to get there...) past a new load of McHousing being nailed up as fast as possible, but once you're in the park bit it's nice.
Allow me to highly recomend kayaking down the colorado river, you can rent boats and spend the day on the river very easily. Launch at the base of the hoover dam and take out 13 miles downstram, lots of hot springs and caves and neato stuff to stop and explore in between. It was the highlight of my own vegas trip.
We rented boats from these people http://www.downriveroutfitters.com/ they do guided trips too but the self guided trip (rental) is significantly cheaper and just as fun. They give you a map to the important things (hot springs).
